stainless steel vs hard anodized?
i'm about to buy my first cookware set, and i don't know what to do. please help me!! these are my toughts:
Stainless steel= i found a nice cookware and it's half the price of the hard-anodized, but i read some reviews on the internet (i couldn't find many because i guess it's a less famous brand: solingen germany) and they just say to be careful because the handles can get hot.
Hard-anodized= it's almost twice expensive, kitchenaid, silicone handles, no holes on the lid for steam. I read sometimes it change the flavors of the food, is that true?
So I want to buy a cookware set that will last many many years, honestly i won't be cooking everyday, just a couple of days a week, like weekends maybe, i'll be cooking for 2, i want to use as little oil as possible, i don't own a dishwasher.
With this in mind, please advice me!!!
Well, Lil,
After many decades of cooking and many tries of various cookware, I've come around to the stainless steel ware. Here's why. All cookware with non-stick surfaces eventually wear out and lose much of their non-stick properties. They then have to be replaced. They also pick up odors and flavors and can affect the flavors of foods cooked afterwards. So, they are more expensive to begin with and also are more expensive by far in the long run because of this replacement feature. That's very good for the cookware makers, but not for the cook.
A high quality stainless steel set will last a lifetime. You'll only have to buy it once. What you are looking for is a highly polished surface with very smooth rivets and an aluminum or copper insert in the base. Heavier is better than lighter. And flat bottoms are better than rounded for cooking on ceramic cooktops.
I have a mixed assortment of expensive and cheap stainless. For pots which will be used for steaming veggies, soups, oatmeal, stews, rice, you don't need to spend much money. A cheap Walmart stainless pot is as good as the most expensive one for these uses. But for pans in which you'll be cooking omelets, fried chicken, chops, etc., you should invest in the best you can afford with heavy gauge steel and copper inserts if you can find them.
And for roasting in the oven, why you can easily get by with one of those cheap porcelain covered poultry roasters. You'll also need a stock pot for cooking spaghetti and larger quantities of chili, soup, etc., and a crock pot for slow-cooking meats and stews.
So, here's my advice. Buy a very expensive pair of stainless stovetop pans, an eight inch and a ten inch, with glass lids. Then go buy a couple of cheap Walmart stainless pots with aluminum clad bottoms, a small one and a larger one, also with glass lids. While at Walmart buy a cheap medium sized porcelainized turkey roaster and a cheap enameled stock pot with a strainer insert. Add a cheap crock pot with a removable/washable insert...and you have a lifetime of good functioning cooking utensils for around $250 or less.
A word of warning. When cooking with stainless you must use lower temperatures and cook more slowly. You should buy some "Barkeepers Friend" or other non-abrasive cleaner to keep them highly polished inside. You'll have to use cooking spray or oil with them, but not very much if you keep the heat low. Use wooden or silicone utensils with them to keep them as free of scratches as possible. Scratches cause sticking.
Bon appetit!

I bought this set to supplement a Cook for the Cure KitchenAid piece that I already had. And sadly, there is no comparison. They are a pretty shade of pink, but are not practical for regular use. The teflon is coming off in large patches in my large sauce pan. The pink enamel hasn't chipped, but it picks up every black scuff and isn't very attractive any longer. The handles are not silicon (as originally thought), but some kind of plastic which is wearing badly from regular use. I paid a fair amount of money for the set, and so plan on using them until they fall apart... but that could be any day now.
